Recipe Request


Update: My co-worker made me the cake when they celebrated my birthday at our staff meeting last week. I know it was early but go here to see a picture of the cake.

I can hardly believe that I am having a difficult time finding an appropriate recipe for GUAVA CHIFFON CAKE like the one Deelite Bakery makes.

One of my co-workers would like to make me the cake since I mentioned that it is my favorite. Our tradition at work is to bring a dessert and card for someone's birthday, which we choose at the beginning of the year. She chose me and, thankfully, she is a great cook. I looked through my many recipe books and even online for an appropriate recipe for Guava Chiffon Cake, preferrably like Deelite Bakery's one, but I cannot locate one. So I'm hoping someone will have a recipe somewhere they can email it to me or even post it here. I live in Las Vegas and even with our many Hawaii residents and restaurants, I have yet to encounter this delight. I would be grateful and you would be making a soon to be 34 year old woman very happy to be turning 34. Thanks!

looks like the orig. recipe has the corrected amount of cream of tartar...what I want to know is, how to make Zippy's Macaroni Salad! I've seen lots of recipes for it (including the ones published in the Star-Bulletin), but so far, the salad does not come close to Zippy's! If anyone can help, please post your recipe.

I don't know about soft gau gee mein, but I found this recipe for crispy style. One would guess you could just boil the gau gee for a soft version.

Jo: are you looking for the soft Chinese noodles?The kind we have here are easily found in supermarkets and noodle factories (they're already cooked, so all I have to do is heat them up and add chicken broth for gravy; plus char siu and veggies).

Mein means noodles; gau gee is stuffed, deep-fried wrappers. You might find dried noodles at your supermarket (some people use ramen noodles to make chow mein).

I tried the recipe for the Guava Cake this past weekend... mmmboy!

It was a laborious recipe (since I did the cake, frosting AND topping), but it was worth it. I think the next time I try it, I will use a whipped cream frosting only, to reduce the work. :)

It tasted great! My co-worker had to improvise on the ingredients, well just the guava. I told her that they sold guava concentrate in the freezer section of most supermarkets here that she could substitute. She ended up using a guava-strawberry concentrate which turned out yummy. She did forget to add the food coloring to make the cake look pink but that was okay. I think she thought it wouldn't look appealing.

We don't really have a "Hawaii" food store but you can find stuff if you look. We have Longs Drug with a good selection of items. We have a few Asian markets but they seem to cater to Chinese more than anyone else.

Joy, I have been looking for this recipe for the same Guava cake from Deelite Bakery for my wife. She has wanted one since we left there in '94 and I was glad to find the recipe. The only one I could find had clove, cinnimon, and nutmeg. Tasted like ginger bread (not even close to what we were looking for). Anyway, hope your b-day was a happy one and thanks for your inquiery, it came in handy,

Dave, I'm glad you found the receipe helpful. It's not exactly like the Deelite Bakery version but it's good enough for the mainland. By the way, if you are ever in California near Torrance/Gardena, go to the King's Restaurant & Bakery (yes, the same one from Honolulu) and they have the guava chiffon cake to purchase. The cake actually freezes well so that you can make the taste of Hawaii last for a little while.

I am away from home for the first time and I find I miss one thing that all away from home locals can agree on...THE FOOD!!! Oh I know some of you feel my pain. The mainland chinese restaurants dont taste the same as home and NO ONE makes cripy gau gee. Anyway, it's nice to find a site where other I can find recipes for food I miss. Does anyone know how to make the exact marinade like Yummy's uses for their meat? or something close to it. I miss home and send all of you my aloha!!

Arigato ^.^ Lived in Hawaii for two years. My mom really liked guava cake and her b-day is coming soon, so I think my dad and I can pull it off. Thanks again for the recipie. I searched practically everywhere for one that used juice rather than paste.

I was very excited to find the recipe for the guava chiffon cake. I am looking for one to make the Dee-Lite Coconut Dee-Lite cake or the Lilikoi cake. I moved from Hawaii in 1995 and every time I go back I return to the mainland with several frozen cakes. Does anyone know where I can find that recipe? Aloha.

Aloha. I actually wrote to Zippys to ask for the recipe and this was the response, which I appreciated. Now we just need to figure out the proportions. I am still searching for the coconut dee-lite cake. I tried the guava chiffon but it was too dense...perhaps I made a mistake. The recipes from the Star Bulletin are the same, as far as I can tell.

All Zippy’s recipes are proprietary; however, I am able to provide you with the ingredients so that you may have a chance to experiment with it. Here are the ingredients:

Best Foods Mayonnaise (do not substitute)
Elbow macaroni noodles
Round onions
Celery
Carrots
Salt
Pepper
Mustard

Do not keep any leftovers more than 48 hours after preparation.

I just wanted to say if you are working on the Zippy's mac salad, grate all of the ingredients, the onions on a fine grate and the carrots on a little larger size. I almost have it down...not quite ye, close though!

after living in boston for 2 year, luckily i found an asian supermarket to buy my precious Pietro Salad Dressing, Furikake and Mochiko...I've learned how to make a pretty close Zippy's Chili (a friend worked there as a cook - he said the secret is to add a tad bit of Best Foods Mayo, not too much or else it turns too creamy) I've also become quite good at making Tempura and Chicken Katsu... however, I too am DYING for MItsuken's Garlic Chicken... please share if you have a recipie.

For the mac salad - the trick is to cook the noodles a little longer than supposed to - so they are really soft. Also - make sure the noodles are cool before putting in the mayo.

We make the L&L Drive Inn style all the time. That one is ONOLICIOUS!! The ingredients for that one is:

Macaroni
Mayo (Best Foods or Helmans)
salt
pepper
boiled egg (grate it super fine)

Sometimes I add celery and carrots and onions like the Zippy's one. Anyway- it's good. Use PLENTY mayo and salt to taste. Sorry no measurements - I always just make it from scratch - just to taste. Anyways....good luck! And....if anyone finds a GOOD guava or lilikoi cake recipe - holla!

Aloha. This is the closest that I have come to the DeeLite Coconut Cake. Make sure you use Parchment paper and sift the flour well. I had to try it twice.

On the Zippy's Mac recipe. The one secret necessary ingredient no one has mentioned is MSG. I use a heaping tablespoon when making approximately 2 quarts of salad. It will then taste just like Zippy's.

Boy, sounds like a lot of people have been looking for the quava cake recipe from Deelite Bakery. My husband lived in Hawaii in the early 80s while his army dad was stationed there. He continues to rave about the guava cake in Hawaii being the BEST! Why didn't I think to check the net sooner for a recipe?!?!? Thanks for the good leads, and I think I'll surprise him for his birthday in February!

Okay, this is not mitsukens, but this is how i make my garlic chicken, and i have yet to recieve a complaint!!

enjoy!!

3 pounds chicken things (boneless, cut into pieces)

1 1/2 C flour
1/2 C cornstarch
1T garlic salt
1t pepper

Oil for frying.

Garlic sauce: ( I really can't believe i'm about to post this, lol! But since its for my fellow hawaiians!!! xoxo)

2C ALOHA shoyu (ALOHA ONLY!!! no kikoman, no yamasa, and especially no LACHOY!! eww)

2C Sugar

1C minced garlic -this is NOT a typo! :)

2 bunches of green onions

2T sesame oil

1/2T chil pepper flakes


Directions:

Sprinkle Garlic salt and pepper over chicken pieces, mix flour and cornstarch together, dredge chicken pieces in flour mixture, deep fry. Drain on paper towel.

add sauce ingredients to pot, bring to a boil, this is so the sugar disolves.

Dip fried chicken in sauce and enjoy!!

I'm looking for a recipe for a truly authentic quava cake and a coconut cake. It is hard to describe the tastes, so If we could duplicate the taste that would be great. We were in hawaii and ate at Keneke's the plate lunch with the macaroni salad! It was such a mild flavor compared to what we have here in the mainland, I would love it if someone knows what to use to season it, is it just mayo and milk? its so creamy! we are hungry for more! Would love to share the flavor with my family at home, and the kalua pig oh my that was incredibly delicious! I would love to re create that as well! Thanks for any help ALOHA! Susan

The main thing with the mac salad is the mayo - Best Foods. Closest thing I've found on the mainland is Duke's, available mostly in the south. Most mayo has additives - vinegar, sugar, etc. Look for commercial or any mayo with few ingredients other than oil and eggs. Other key thing is to let the cooked mac drain really well ... spread it out and let it almost dry. Then it absorbs the mayo better.

And the person who said grate the onions is right on the money - but don't use the onion juice.

Susan, how close to authentic do you want to go with the kalua pig? You can go oven, crockpot, smoker, steamer, or imu - depending on what you've got. Let me know and I can help. (Good call on Keneke's ..)
