I always wondered how they can make fishballs taste so chewy, bouncy, and hot-dog-like, when cooked fish tastes so rough and flaky. I mean, WHAT do they put in it?

I think it’s because the fish meat gets all pulverized before they steam it. Something about protein polymerization. It’s not so odd. After all, a hot dog isn’t much like a steak, either.
